VARIETY CHARACTERISTICS

The soil of the mountainous slopes in Aigialia facing northly, of medium yields produces very interesting dry wines with a good balance between alcohol and acidity, along with citrus, flower, apple, melon and banana aromas. The variety may produce wines of full body and ages well.

WINEMAKING PHILOSOPHY

Roditis Alepou of the slopes of Aigialia is well known for its quality characteristics. As the grape of the PDO Patra zone it is grown in Aigialia. RODITIS FOX skin contact is a single vineyard organic cultivation in the Mamousia plateau at 850m altitude and it portrays the special characteristics of the variety along with the minerality of the terroir. 

The grapes are destemmed and transferred in the tank of white vinification. Wild yeast fermented at a controlled temperature of 15ᵒC. Daily short recycling. Maceration on the skins for 30 days. Following the separation from marc, the wine remains on the lies for 3 months. UNFILTERED.

TECHNICAL CHARACTERISTICS

The reddish Rodites Fox is fermented in contact with the skins, without any addition.  Amber color with orange highlights. Impressive citrus aromas with notes of minerality. Rich on the mouth, with lively acidity with soft tannins in the aftertaste. It can be served with chicken with curry and spicy dishes.
